Took my neice and future nephew hunting while they were home from Iraq

This was their first time to go hunting. I had promised her that when she got her leave, which was supposed to be in November that I would take her hunting on my lease in Camp Wood. Her leave kept getting put off, and by the time she made it home it was June 1. Well a promise is a promise and I wasnt about to let her down, so I made an appt with Bill Buck at Briscoe Exotic Ranch and set up a date. She shot a 165lb Sika, He shot a 225lb Nilgai, and I ridded the ranch of a 220lb hog. They were both very happy with the hunt, and Bill and Rick made us feel right at home. Special thanks to Rick, who was acting as their guide and had to get out of the stand and chase off some real big boars. They come home for good in December, and I think I will take them there again. Here are the pictures of the animals taken:

Here I am with my hog.

Nilgai was shot with my Charles Daley Mauser action 30-06 using 150gr Hornady nosler balistic tips

Sika was shot with my Winchester .270 with Remington green box 150gr.

I took the hog with my trusty Remington 710 30-06 with the same rounds as the Mauser.

I have had two hunters tell me that the Sika is really an Axis. They say that they have never seen a spotted Sika. I guess they dont hunt the hill country where I hunt because the ranch next to ours is loaded with them. Ive never seen an Axis with such a dark coat, but you cant tell these guys anything.

Yeah, I almost had to get a bigger freezer. Luckily I thought of having 50 pounds of the meat made into slimjims and jerky so that I could ship it over to them. That left just enough room. Gonna have to find a place to put my fish though...

Best part of the hunt was when Brian quoted Ted Nugent and said "You cant do that in France!"

Yeah, try telling these two that. They see the spots and that must mean they are Axis. You know the type. They have already been there, done that and wrote books on the subject. Anyhow, the meat is home from the processor, and the steaks are incredible to say the least. And to think I almost had them make sausage out of them. I havent had any of the antelope yet, but I'm told that they will be very good too. Its going to be tough trying not to eat it all before December when they come home for good. Well, not really for good, as she will have to go to Afganistan after a year stateside. Can you believe she is an MP and a gunner on a Hummer? Oh yeah, and the deer rifles are called weapons! I was reminded of that a couple times.

I think I would try everything but the zebra. Too much like eating a horse if you ask me, but to each his own. Going to try some of the Nilgai tomorow. Should I cook it like the Sika, that is, Medium rare or should it also be well done?

I wouldnt have let it go to waste, but its just not my thing to hunt zebras. Not saying it shouldnt be done, just that it isnt for me thats all. I have to admit though, Im kind of curious as to what it tastes like. I bet the skin made a nice rug. Yeah the nilgai was a young cow. I dont know how to judge the age of them, but from what I know about whitetails, I would say 2-3 years old.
