If you didnt know, Javelina is better tasting meat than wild hog. Here's a great recipe for a group. Sounds funky but tastes really good and is simple.

 

A Javelina roast.

1 Jar of Libbys sauercraut

@ 5 potatoes skinned and cut into chunks

Hard to beleive, but no seasonings other than salt & Pepper.

Cut the roast into bite size chunks and sautee in a frying pan with a little oil. Put meat either in slow cooker or a pot on the stove top. Add sauercraut, potaotes and enough water to cover all. Cook over medium heat for an hour, checking water occasionally.

Voila! This is some good stuff and I don't care for sauercraut much. It's one of my other halfs favorite meals, and he's picky.
