Backstrap for Dinner

Last night I looked into the freezer and realized we had not gone to the grocery store recently to purchase items for dinner. No chicken breast, ground beef, or porck chops. What I did have were several packages of processed deer backstrap, steaks and Wild Hog sausage. So I decieded that Thursday night would be a perfect night to bust out the backstrap from the buck I killed in November and make a special dinner for my family. When I told my son what we were having for dinner he almost lost his mind because he absolutely loves wild game. He has been eating dove, rabbit, fish, deer, wild boar since he was a little boy and knows all too well the benefits of eating high protein deer meat. Since I am the primary chef in my family I have the liberty of planning and cooking 90% of the meals cooked in our house. This is something I am very proud about because it breaks the typical sterotype that women belong in the kitchen. I happened to be an experienced cook and very proud of the techniques I have learned on how to prepare a variety of meals for my family. I was blessed to have a mother that worked in a great Mexican Resturant in South Texas and she passed down to me the tradition of cooking some great meals. So, cooking a backstrap dinner with homemade mashed potatoes and cream gravy was no problem for me last night. The hardest part was the messy cleanup afterwards, but teamwork in the kitchen after the meal tackled that chore. The meal was excellent and I am thankful that I can provide my family with a variety of wild game meat and good tasting fish throughout the year to supplement the items purchased at the grocery store. Now with Dove season on the way I plan to harvest and save my birds for a special occasion such as a Dallas Cowboy football game or Texas Longhorn game so I can fire up the backyard pit and enjoy some tasty birds. Uncle Ted Nugent would be proud of me for promoting such a lifestyle that incorporates wild game into our family menu, I hope your meals this fall include some healthy wild game for your family's enjoyment.
