HEART

Last night I looked into the freezer and realized we had not gone to the grocery store recently to purchase items for dinner.  No chicken breast, ground beef, or porck chops.  What I did have were several packages of processed deer backstrap, steaks and Wild Hog sausage.  So I decieded that Thursday night would be a perfect night to bust out the backstrap from the buck I killed in November and make a special dinner for my family.  When I told my son what we were having for dinner he almost lost his mind because he absolutely loves wild game.  He has been eating dove, rabbit, fish, deer, wild boar since he was a little boy and knows all too well the benefits of eating high protein deer meat.  Since I am the primary chef in my family I have the liberty of planning and cooking 90% of the meals cooked in our house.  This is something I am very proud about because it breaks the typical sterotype that women belong in the kitchen.  I happened to be an experienced cook and very proud of the techniques I have learned on how to prepare a variety of meals for my family.  I was blessed to have a mother that worked in a great Mexican Resturant in South Texas and she passed down to me the tradition of cooking some great meals.  So, cooking a backstrap dinner with homemade mashed potatoes and cream gravy was no problem for me last night.  The hardest part was the messy cleanup afterwards, but teamwork in the kitchen after the meal tackled that chore.  The meal was excellent and I am thankful that I can provide my family with a variety of wild game meat and good tasting fish throughout the year to supplement the items purchased at the grocery store.  Now with Dove season on the way I plan to harvest and save my birds for a special occasion such as a Dallas Cowboy football game or Texas Longhorn game so I can fire up the backyard pit and enjoy some tasty birds.  Uncle Ted Nugent would be proud of me for promoting such a lifestyle that incorporates wild game into our family menu, I hope your meals this fall include some healthy wild game for your family's enjoyment.

Not a problem, I will get those up soon even better I will put a little twist to them and make those "Wild Hog Tamales" and "Wild Game Enchiladas" This year when two nice Wild Pigs were called at the Ranch this year two cuts of meat went quick the head to make Tamales and the Ribs to throw on the grill fresh at camp!!!  I am a firm believer that Wild Pig meat tamales just taste better then store bought pork meat.

Yall Are making me hungry all over agian!!  Everytime there is a fifth Sunday in a month, our church just has the morning service and then we cook and fellowship the rest of the day. Well I thawed out some wild hog backstrap and marinated it in soy and cooking wine all night. I then skewered it with squash, onion and bell pepper and then I grilled it. You talkin about good!! Man that sounds great!!! It nice to attend a church that allows it's members the opportunity to host events like that one.  I was lucky enough to get some Wild Boar backstrap from my father who shot a 350lb wild boar at his hunting lease.  I was craving pork chops, but settled for the backstrap.  I marinated in Italian Dressing and grilled it on the bar-b-que pit at home for some friends who had never eaten wild boar, they loved it!!!  My wife and son also enjoy eating wirl boar very much, gotta shoot me one this year!!!

Can not agree more.  My son is 11 months old, and loves my Venison meatloaf.  I also took a few bites of grilled backstrap and chopped it up really fine for him the other day.  My freezer is pretty empty right now, but I plan to have it fully stocked for him as his appetite is growing like crazy!

My kids would rather eat wild game or fish than goto McWhatevers!!! I am blessed with a wife and kids who enjoy what dad brings home from his outings!!! Well I really can't say they were all my outings.......they were both in the stand with me when I killed the hog we ate Sunday. And they do contribute to the fish we have in the freezer!!
