SKULL

This South Texas Huntress took out a Javelina and is mighty proud.  Nice view through the scope!  Anyone ever eat these things? (Javelina's not scopes)

They smell to bad to eat... some do but I can't get past the smell and fleas... On the javelina, not the scope....

you have to skin the javie with one knife being careful not to get any on the meat. use another knife to quarter it. tenderize and marinate the meat over night in some buttermilk (24hours). then dip in egg, flour and fry the meat......it comes out real nice. I have some buddies who swear its better than whitetail. there is a saying on my ranch "you shoot it, you clean it, you eat it" except of course coyotes, bobcats, so i learned to make javalina

Javelina stinks bad but can taste great if taken care of properly, you can soak the meat in ice water with some vineger to take away the stink, I have had Javelina deep fried and it's great.  There is a nice Bizzare food episode with Andrew Zimmer where he shoots and cooks a javelina with red wine!!!

Seared, then slow cooked in smoker overnight makes for some tender Javalina hams.  Same on our lease, you kill it, clean and eat it.
