CHANGE FROM STEAKS

We usually grill steaks for supper, but it's just been too hot at the lease and I decided to try something different. You can buy pork loins at the store, or use cuts from any hog you get.

Put a little oil in a skillet, and let it heat up over a medium flame. Pour some beer in a shallow pan or plate. Lay out some foil, and pour on some flour seasoned with salt, pepper, and any other spice you like. Wet both sides of the pork cuts in the beer, and then dredge both sides in the flour. That's right, you're going to chicken-fry them. Fry on each side for 3 - 4 minutes, or until there is a crust. Turn the heat down to low, and pour a bottle of salsa over the meat. Let it simmer for a couple of minutes, turn, and simmer another couple of minutes.

Place the cuts on plates, pour any salsa remaining in the pan over them, and add a side dish of your choice. We use spicy beans. The flavor is great, the meat is lighter than beef, and it is really quick and easy to fix.
